A crispy golden fillet of sea bass standing on its tail. Just thinking about the dressing makes my mouth water. It has peanut, fresh chilli, shallots, limes, lemongrass and ginger. The flavour is balanced with a bit of nam pla, a bit of lime juice and a touch of roasted chilli.
