|Chicken Wings||Chicken wings – barbecue marinade, spicy chilli marinade and even southern fried coating are predominant in American restaurants. Small wings and even tiny drumsticks are served, skin on with a delicate marinade and a selection of dips, such as barbecue, chilli, blue cheese and lime and pepper. Sometimes chargrilled and other times cooked in the oven and oozing in sauce. Starter portions are usually quite large!||Charcoal Chicken, American|
|Jerk Chicken Strips||Marinated chicken strips are served in most charcoal restaurants. Jerk chicken is a very popular flavour, with hints of the Caribbean, plenty of chilli, lime and ground spices. Some restaurants will serve these with old fashioned chips, but some of the better restaurants and charcoal takeaways will serve them with the traditional accompaniment of rice and peas, and a side of coleslaw, which is also spiced with lime mayonnaise and extra diced chilli. In some restaurants the grill is visible to the customers so they can see the activity in the kitchen and experience the wonderful smells at a much closer up location!||Charcoal Chicken|
|BBQ Chicken Wings||A very popular dish, often served as a starter portion with extra dips and deep fried potato skins. The wings are called ‘buffalo wings’ in certain establishments and these can be a little fiery to say the least. Traditional barbecue wings are served in a marinade of tomato sauce, honey, Worcestershire sauce, brown sugar and malt vinegar marinade. They can also be purchased for takeaway in a huge bucket for 2, 4, 6, 8 and onwards!||Charcoal Chicken|
|Peri Peri Chicken Breast||Sometimes also called ‘piri-piri’, the chicken breast is marinated in a strong crushed chilli based sauce and made with the addition of onions, garlic, basil, oregano, citrus peel, lemon and salt, among others. Originally from Africa, it made its way to the Portuguese mainland, and they now claim it as their dish. Can be extremely hot, but tends to be toned down for European use. Normally served with a side salad and probably chips, it can be found in charcoal restaurants, but also milder versions in pubs and burger restaurants. A peri peri chicken burger is also served in most charcoal chicken restaurants.||Charcoal Chicken|
|Charcoal Mixed Grill||Top of the list for many diners, and usually comprising a lamb chop, chicken breast and a small piece of steak, all chargrilled and served with salad and jacket potato. The diners will have a choice of marinades on all the meats, or just plain grilled over charcoal. Can be served with a creamed chilli sweetcorn dish, or plain mixed salad and fries.||Charcoal Chicken|
|Spicy Potato Wedges||These can be served as part of the main meal as a substitute for chips, or as a starter dish or takeaway. Wedges of potato are coated in a spicy rub and either deep fried or baked. Usually served with a sour cream dip or barbecue sauce. The rub is usually comprised of powdered chilli but sometimes jerk seasoning is used.||Charcoal Chicken|
|Coca Cola||A lot of charcoal chicken style restaurants are actually takeaways and as such will not have a licence for alcoholic drinks. The upside is that large bottles of coke or lemonade are included in meal deals and frequently free depending on the price you pay for your food. Restaurants that are ‘dine in’ will also have help yourself coke machines, where you can go as many times as you want to fill up your glass.||Charcoal Chicken|
|Lager||If you come across ‘eat in’ charcoal restaurants, lager beer will be the main focus for drinks. Both on tap and in cans or bottles, a good selection of beers from various regions of the world will be listed. It would be rare to find any heavier beers, but you may come across the odd one or two. Most charcoal restaurants are takeaway only.||Charcoal Chicken|
